I think that your supposed to change the storage area air regularly with potatoes as they produce carbon dioxide which depletes the air..
I cant find much so far on the gases given of so if anybody knows anything of use, dont be afraid of posting it...

Carbon dioxide based fire protection systems have been linked to several deaths, because it can cause suffocation in sufficiently high concentrations.
So as they use them in fire suppression systems to remove the oxygen from the air to stop the fire, that's how you die in a sealed room with potatoes, they release carbon dioxide which depletes the air, therefore you suffocate.
