Yep Starlings are edible.

US Government issued cooking recipes for them in the thirties when trying to eradicate them.

Big Paul, if you take up the challenge this may be useful:

Starling stew with olives

A recipe from Calvin Schwabe's "Unmentionable Cuisine."
— by kind permission of the University Press of Virginia. This one comes from Turkey where it’s known as “Karatavuk yahnisi.”

“Fry some chopped turnips and carrots. Add a little stock and a glass of red wine. Place some starlings or other small birds in the pan. Add a thin purée of boiled potatoes mashed with beaten eggs, dry mustard, and some stock and a little beer. Cover with stock and cook for about 30 minutes, adding some ripe olives near the end.”

Here in NZ, week 5 of Covid lockdown, it is illegal to Fish and Hunt !
A month of free Rations & Quarters if caught. Bizarre.. some people are starving in rural areas.

In 24hrs, this will change to allow fishing if not using engine (no outboards or big boats)
and Hunting (again no motors, Quads, 4x4 etc) on Private land only. No State Forests.
