burgers - bowdrill - 9 February 2012

just made 25 burgers and 50 sausages from the venison i had last weekend plus joints to roast, steaks ,and enough for the stew for a good while does any one else make there own and any recipies you would recommend

We make all our own sausages and burgers. Its so easy to do you can buy a manual meat mincer with filler tubes for sausages for £30. Get a Burger press or round them by hand for burgers that you can taste the difference.

Rabbit burger recipe
1/2 k minced rabbit
1/10 K of pork fat
2 eggs
1/5 k bread crumbs
1medium onion
Salt & pepper to taste
Finely chopped herbs – whatever is growing in the garden, parsley and sage work well.

Pheasant burger
1 pheasant, oven-ready, or 2 pheasant breasts
1 onion
Tarragon
1 egg
Salt and pepper

Venison and chilli burgers are good. Not got a recipe though, I just mash it all together with a bit of egg squash it into a burger shape by hand the whack it on the BBQ.
