I think it's better to get learning about the plants before you need to know good from bad.

I've got a couple of books on edible wild plants.
Don't know them all off by heart only very few and as b.p. said stay away from mushrooms unless your an expert, the only one I'd definitely eat is giant puffball because you cant mistake it the rest aren't worth the risk.
there's plenty of wild foods to forage depending on your location, but they like other normal veg is mainly seasonal.
So no matter what winters going to be a lean time like it is for the animals...
I think the trick is eat as much as you can when its available because there's a good few months with slim pickings over winter.
