thats the part where you remove the bowels? your not supposed to drip anything onto the meat. its supposed to be bad, very bad, to allow the outer fur, to touch the raw meat as well.

It doesn't matter if the outer fur/hair touches the meat, its the content of the bladder that you do not want to puncture,... although its not the end of the world if it does, just wash it off as soon as you can

I skin deer at least twice a month, it would be quiet a job to skin without hair touching meat
