The best video iv ever seen on butchering a pig is this one.

Its also the most practical info iv found for the homesteader/prepper for home butchering a pig.

Dont expect to do it in 6 minutes like this bloke.
Allow about an hour.

You can either drop the pig in a steel bath or barrel full of boiling water heated over a fire or burn them off with a blow torch.

That is to remove the hair and sanitize the skin.

We never skinned our hogs, they were processed with the skin on. We also hung ours for processing and they were about 3x that size.

It is interesting that the fellow doing such quick work is using a common chef's knife and seems to not require a custom hand forged blade. Just a good knife and a steel.
