interesting article and whilst it is easier to buy in smash I still be adding the info to my files and giving it test run as this would be a good way to process excess potatoes hen you can nip to the shops to buy smash

I haven't dehydrated white Potato, but have used Sweet Potato. You can use the same process for Pumpkin or Winter Squash, Carrot, Swede, in fact any mashable fruit or veg.

Cook veg and cut into slices.

Line dehydrator trays with baking parchment and squeeze veg onto tray using a potato ricer.

A quick whizz in the liquidiser and here's the finished product.

And rehydrated.

Meant to say, there's about 4lb of Sweet Potato there.
