What sort of beans are you using and how are you drying them? There are plenty of dried beans around and they seem to last ages.

After being cooked they require refrigeration, like most other foods. I have kept them in plastic containers for several days in the fridge with no ill effects.

When my kids were small they enjoyed pintos served on top of corn bread as a first meal and chili made with the leftovers.

A couple of pounds of pintos cooked up never lasted more than a couple of days.

What you need to think about mate, if you've just picked the beans, they'll be clean and healthy. Imagine having picked them 4 days ago. That is what dried beans will be the equivalent of, once they are rehydrated. So that's about the time you should expect from them.

Instead of soaking them and storing them, why not just soak what you'll use in a day, and stick to doing it like that?
