Thinking from backpacking experience, there is no reason why one shouldn't be able to pack a 1-week bug-out bag which is light enough to allow someone of moderate fitness to walk all day over rough terrain. The difference between a 3-day and 1-week bag is very little, being mainly food. This assumes one will collect water enroute, and will have purification / filtering equipment on board.

If two people are travelling together the burden becomes less, as items such as a stove can be shared.

A good way to prepare for walking all day with a BOB is...to walk all day with a BOB!
