If you have the time and inclination I would recommend preserving. I have a 250W dehydrator and a pressure canner. With those I can pretty much preserve anything. Some veg lend themselves really well to dehydrating, others I Can or pickle. I preserve fruit and meat too. Next is to try canning butter. My aim is to have everything preserved without the need for a freezer and not have all my eggs in one basket.
