they are really quite awesome, totally air tight, good quality glass, and tinted to stop uv and blot out most other light, so it should, in theory, stop all the things that degrade food over time, just make sure u fill it right up, so theres little air locked in to oxidise your stores (those jars are also good for storing other things, if you read the description of them you'll get it )

also i'd look into vacuum sealing things and things, they are really cool, also if you look at how MRE's are packaged that may offer some insights for ya in terms of good ways to store food long term
