Scythe, when gutting a fish, you slice it from it's butthole to its gills. Then it's a case of scooping everything out & pulling any stubborn bits. I usually remove the head & tail at the same time. The seagulls love me when my dads boat is coming back in from sea

Nice one. Thanks GR. I had worked out a 'round abouts' way by checking what the fish look like in the supermarket counter, which was pretty much identical to your system GR, just without the head and tail chopping off.
